Sailing Expedition Reflection

I hope you enjoyed your sailing experience as much as I did, and that your experience aboard has provided you with some insight into what the schooner and windjammer industry is like in Maine.For this expedition, your formal focus for ADV110 was your menu and food preparation for a group. This was one of three group cooking experiences you will have this year. For this blog, please review the goals we listed (see below) and spend some time thinking about the following questions before writing. As I mentioned to you earlier, I am expecting to see evidence of quality time reflecting and writing about your experience.

Planning

  • How well did your recipes address your goals? Identify those goals accomplished, and those that could be better addressed next time.

  • How could you prepare the meals differently in the future that might better achieve your goals? Consider everything from purchasing ingredients and repackaging to packing and cooking.

Planning:
I think our meals tasted pretty good and they were filling and able to withstand limited refrigeration. But I don’t feel they all met the goals we set out for ourselves. I would have liked to get more fruit like cantaloupe or some extra berries like blueberries. This could have made it more nutritious with antioxidants and vitamins and could have made the meal more pleasing to the eye with the colors.
The theme was basically “chicken” , or you could say “salmonella”. We either directly or indirectly used chicken for every meal, hence the link to salmonella, chickens unsavory friend. But we were careful in dealing with Salmonella. I think our group maintained our sanitation practices to the tee. Nothing was dropped on the floor and used again without sanitizing, I swear! Our hands were washed and re-washed and the meat was cooked to the appropriate temperature or even overcooked. And it was stored on ice.
We did very little for our presentation, it might have been better to wait until everyone was there in order to make our dinner announcement, it felt like there were some stragglers that missed the announcements. Our menu came out to a little more than 8 dollars per person but it offered a varied menu, with the exception of one thing. Peanut Butter, and Jelly was a staple across the groups, or gruber, ughh!

The shopping list was matched up well with the foods we prepared, although, we ended up picking up some extra bread and granola bars in case it was needed for a longer haul, or more hungry people.

Preparation
I think the quality of the meal was good, a lot of effort was put into preparation of a few of the meals. The chicken was the bank breaker, but we were able to secure some really cheap chicken from another source. The chicken soup was lacking in celery, which was purchased but forgotten at the time of cooking it. I think a less involved meal would have been good but not as cheap. There is some balance that needs to be found between really easy and quick and really cheap but with a little extra work. I suppose it will depend on how much time we actually have to prepare a satiating meal. I also think the bread takes up so much space. Could we buy denser bread like Dana’s homemade two pound loafs. They were half the size and twice the weight of the store bought bread. Bread Machine for the OAC? Most of the member of the group were responsible for the meals, some were in and out depending on the meal, or task. But overall there was participation from each member.

Presentation
No, the meals were not presented, dinner was announced but there was no explanation of the set-up, and people were just coming up a few at a time. Maybe I should have taken the time to do a little history lesson on the domestication of the chicken in China and India in 5000 BC and 3000 BC respectively. Or talked about how a flightless bird that tastes oh so delicious could have gone so long without being wiped out by predation. Its not likely humans could let such a tasty bird go extinct, luckily or unluckily for the chicken. It there wasn’t chicken in one of our meals there was at least chicken eggs, and who knows, maybe a chicken helped to fertilize our vegetables. Our meals were a tribute to chicken everywhere. But, of course we barely made a presentation, and the theme may have existed only in speculation.


It was about the same, although there was a schedule there still seemed to be a good amount of down time. Unfortunately, the winds were not blowing in a favorable condition and we did not sail as much as I would have liked. And even if we had, I think they still would have used that noisy low powered Diesel motor from World War II. Nautical Navigation seems on target, we were able to estimate the docking of the ship with good accuracy, but we were not consistently accurate. And I don’t think I learned much about using the drift from tides. Nautical Navigation feels more like an approximation, or a slightly educated guess, when there are no landmarks, buoys, lights, or GPS. Thank God, Allah, Ra, etcetera for GPS!
The Haley and Matthew feels like an indestructible boat compared to the FJs even in the big waves. Its too bad I didn’t get to hear a little speech about the state of the schooner or windjammer industry in Maine. It seems like it does well in the summer time, but certainly needs the regular flow of business that a trip to Florida might provide. That’s a lot of boat to keep up. I wanted to know if there was room for more schooner tours, is the industry floating or sinking, is it sustainable or profitable? How does it compare to other ocean regions? I didn’t do that much on this trip, I helped out with some sails, I helped to fold up the sail while it was lowered, did some steering at the helm, plotted some fixes, and carried some group gear. I think we all did pretty well as a group, I know there were some people who wanted to keep sailing, some who wanted to go and some that didn’t care either way. But we were able to live with whatever the decision was. Still had an experience worth mentioning.

Well we only sevrved breakfast the first morning on the boat we had eggs, sausage patties, and home fries. we could have done better on the home fries but the rest everyone seemed that the enjoyed it. So next time we should think up a better way on making the home fries. We got the right amount of items other were able to have seconds if they wanted to. Making the meal did not take so long, everything was precooked except for the eggs but that didn't take long.

Dana Marble Quite abit of planning went into every meal. There were different idears thrown about every step of the way. The final outcome had some input from every member of the group.First we planned each meal individually,then we formed a list of ingredients. The next step was to determine how much food to purchase in order to stay within budget and have a satisfing meal for twelve people. A trip to the store to price out the list was essiential to find out if we were within bugget. Precooking the meat and potatoes saved a lot of preperation time while elimating the posibility of spoilage. We tried to present a varity with each meal. The sailing experience was a little disapointing,I had expected to do more sailing than motoring even though there was a time resraint. It would have made a difference if we could have shut the diesel down a few hours and sailed.

we were only able to prepare onemeal but everyone that wasnt sick seemed to injoy it. plenty was made for seconds and even some for the crew. we could of done better. didnt have a presentation for it and under the conditions i dont think it would of lasted anyway. but in all i think it was a success.
i personaly loved the trip just being out on the water was enough for me even tho we did more motoring then sailing. i am kinda disapointed that we had to get off early instead of going all the way to are planned destination. would of been alot better if no one got sick so we all could of injoyed it but either way this was 1 experiance i wont forget anytime soon

I think that the recipes we made all went really well. We followed through on all of our meals
but I think the chicken noodle soup could have used some more flavoring. We did forget to put
The celery in it but I still think it could have used more. We got everything on our shopping list and
I even think that we had almost too much food. I don’t think anyone walked away still feeling hungry.
We even had money left over so we grabbed some extra cookies and ginger snaps which came in handy
the last night on the ship. Although, it was too late for me. Lol. I think all of our meals went really well it was hard at times on the ship trying to figure out what was our cooking supplies but other than that all of our meals went really great. I also believe that we all worked really well together. There wasn’t any major conflicts we all just went with each others flow. I had a little trouble because I don’t really like to cook but it wasn’t that bad. I’m also sorry guys I wasn’t down there in time to help with the dishes the first night. I thought we were going to wait a bit before we dug into that. I believe we packaged our food great. We all knew exactly where all of our food was. There wasn’t any real confusion or searching. I think that being on the Haley and Matthew was a great experience although I don’t know if I would ever do it again. I think if I did, I would not eat such huge meals. Maybe that’s why the crew only were eating smaller meals like sandwiches and crackers. My dad who is also a boat man and has done a lot of it said that it is better to eat smaller meals. So that is one thing I would change.
I really enjoyed the first and second day when the water wasn’t too rough and you could really enjoy the areas around you. It was really cool to be able to not see land but I think seeing land made it more interesting. I’m also sad that one of our finches died! What ever happened to the other finch? I don’t think
he made it that night when it was really rough out. I’m not too sure about my nautical navigations skills. Honestly I find it confusing and I don’t really enjoy it. I think its because I don’t really enjoy sailing. It
is nice to just understand the ropes of the ocean though. I thought being on a bigger sail boat is way better then those ones we use in our class. I fear those dinghies and I don’t know why. I don’t like how they can tip so easily it really scares me. I felt safe on the Haley and Matthew where I don’t in the dinghies. No matter who is the captain. I have respect for the people who are in the schooner industry.
that is a really hard job making sure everyone is safe and that you know what you are doing. I think
If you really love being on the water it would be a great job but I wouldn’t want to do it. I felt
As if I did an okay job on the sail boat. I wasn’t really enjoying myself but I tried just because everyone else seemed to really like it. Honestly I was happy we got off where we did. I know now that sailing is not my thing but I’m glad I had the opportunity to try it. Its nice to say you have done some of these different things. I know many people who would have loved to be able to go with us on our sailing trip so I am glad I got to try. I also think we did a great job as a group. I really liked our
Group. We all worked really well together.

With the planning I think it went pretty well. We had a plan and we stuck to it. Nothing much changed out of all of our meals we had pretty much the same things. We also only got to do dinner and somewhat of a lunch but I think if we had the chance to do all of our meals the way we had planned on it everything would have been presented nicely.
Our theme to me was pretty much lazy teenager, who else in the world would think up sandwhichs and bagel pizzas, a lazy teenager with no time...lol.
The prepartion I'm not gonna have to much to write about cause honestly I wasnt there for the prepartion of the food which I feel terrible that I wasnt able to.
Presentation I take went very badly cause everyone was sick and the thought and smell of the food made everything worse that also goes for me. I wasnt really feeling the pizza vibe like some of the non-sick people on the sailing trip.
My experience the first day was great! I loved being on the ship and I had looked forward to going the first day he had told us about it. Although the second day was miserable and sickening and I honestly had just had enough of the boat at that time and place. The Haley and Matthew is a beautiful sail boat and I'm so happy that I can go and say that i went on a trip to Mass. in such I beautiful boat. The experience was great ad I really enjoyed it.

Planning
We only got to cook one meal which was pretty simple it followed our recipe plan. It was intended to taste good and be relatively easy to prepare which it was. Wasn’t really a theme to our meal just thought something common and good such as pizza would be a nice treat.
We kept the budget under $8 even though we could have got a little more just for snacks and extras. Should of got together more with my group to plan to the meals so we wouldn’t have to decide which to go with at the last minute. Sense the list was changed at the last minute only some of the foods we got so should of took some more time in planned ahead so wouldn’t be as much of a hassle.

Preparation
Personally I thought it was good, ashamed that some were sick and just didn’t want to eat but in all just seeing pizza was a great sight as well as eating something that u wouldn’t think of having out on a school trip well on a budget.
The goals for that meal were as we expected, was simple and all the ingredients could lasted awhile. Only thing that took up some space was the bagels but considering the amount u get for the size it took up was worth it and cheese, pepperoni and sauce were easily packed.
At the beginning we were kind of all on our own preparing the lists but once we got together and went through the 3 lists we decided on the 3 mails we would prepare. After that was settled we started to work in a group to prepare serve and clean up. Next time just have to think ahead and get together awhile in advance to make sure it is all settled and ready to go so wont be in as much of a hurry when we have to get all the groceries.

Presentation
We didn’t present our meal and under the time that we cooked it probably wouldn’t have been the best time sense almost everyone wasn’t feeling like eating or really doing anything except laying down.
Idea about everyone else but just the smell and sight of a pizza was enough of a presentation for me. We made sure that the pizzas looked decent instead of just throwing everything together.
We never really thought about a theme but after seeing some of the reactions to it the theme seemed to be a treat from home. Pizza is a common snack and food at home but how often do people have it if they have a small budget or r on a class trip. So in all was just a reminder of home.

Reflection
The trip on the Haley and Mathew was a great experience for me. Was kind of disappointed that we didn’t actually do much sailing instead of using the motor. I have been on the ocean few times before working on small lobster boats so I sort of knew what to expect about the motion of it.
The high points for me where just being out on the water, the 2nd day was a blast hitting the waves but either way it wouldn’t of mattered to me. The down point would probably of had to been the 2nd night just because going over the waves and getting tossed around was fun at first but started to get boring specially when I was trying to get some sleep.
I believe I still need a lot of work before I really understand nautical navigation. Plotting courses I pretty much understand after the trip but still going to try and keep learning more about it.
Would be hard to describe the difference between the Haley and Mathew to sailing the small FJ dinghies sense we didn’t really sail much but from what it was like wasn’t really a whole lot of difference just set a course and try to keep on it as long as the wind is right.
I really didn’t think the tourism for sailing and stuff was all that big in Maine so I was surprised id personally enjoy doing something like that and even just being part of a crew that takes the schooners or other boats of around that size up and down the coast for winter or summer. I didn’t talk much to the captain or crew about it but seemed as though a lot of them make a living out.
I think I performed well during the trip did was I could to help out or just sit back and watch how things were done. The last morning we were on was up at 2:30am and helped watch for lobster pots that were in the Cape Code Canal.
As a group first day we all did what we could to help or to stay out of the way but on the second day the rest of us that weren’t sick did our part as a group to help out the crew.

Planning
I think that the meals that my team and I planned were pretty good I had a few goals that I was shooting for. Which were nutritious, tastes good, easy to prepare, sanitary preparation, variety, $8 pppd, My themes were Denny Breakfast, Memories of the Kayaking trip for Lunch, And For supper was Taco Bell. All though my team only got to prepare breakfast I cant really answer the question on my goals for the other two meals. My shopping list wasn’t that bad to what I first wrote on it I had to shed a few little things so I wouldn’t go over my spending limit.

Preparation
The Quality of my meals were pretty good I thought every one I question about how my meal was said I did an excellent job and that they were all full and that there was more then enough for everyone. I think my team did an awesome job with or goals. We had prepared our food ahead of time so It wouldnt have taken that long to prepare on the boat So I wouldn’t have change it at all except for if I was planning on making a soup or something I would have to boil water with I would take that off the menu after the expeiences we had on the boat with the big waves. I kinda took the lead position for preparing the food and the list I kinda just told my partners what we were doing and they said it was fine. I think it worked out better with me telling my partners what to do with what to do. I also did the majority of the cooking I had them help with the preparation before I started cooking as the meal finsihed I had my partners clean up the area around us to make the food area more presntable .
Presentation
My meals were not well presented I was thinking about it while I was prepareing the food. It just left my mind when people started lineing up for food . Everyone was just hungary so we just served the food.

I think my group and everyone else had good recipes even though we only made breakfast for the first morning on the boat. I think we followed the goals that were set for us it was easy to prepare ours because it was already precooked before we went on the trip, and the eggs didn't take long to cook, the nutrition that we had in our recipe was the having a vegetable, dairy, and a meat, most of our food had to be refrigerated. Next time we prepare meals we should add some sort of flavors so it isn’t so plain because the home fries needed some flavor.
I think our shopping list was good we had enough for everyone and people were able to have seconds. For preparing we had all the right ingredients we could of got some other things such as spices, I also think we did well on packing the food because nothing got spoiled. Are group had an equal share on preparing the food, because we got it done in good time, and we all had something to do.
We didn't really present our food we had a theme we said it was Denny's for breakfast.
Sailing on the Haley and Matthew was a new experience for me but not something I would do for a living, I had fun when we saw dolphins, whales, and standing in the front of the schooner getting wet. The low point of the trip is when we all didn't feel good that just wasn't fun. I didn't do anything with the charts but I could do some plotting.
It definitely takes more people to work the Haley and Matthew than it does to work the FJs and if we were on the FJs out there it would not be a safe thing to do. My impression for the people who do this for a living is that they must be good at calculating on a chart, and likes to be out on the water.
No I did not perform individually but I did help pull up the sails and put the rope in a pretzel shape that the captain showed me.

The meals I had planned really seem to make everyone happy on the trip wich was my goal. I remember last trip I felt hungry most of the time. I didn’t want others feeling this way if I could help it.
My shopping list reflected what I purchased exactly everything I said we needed we got and besides bying more of the same stuff no meals changed.
I feel my meal quality was good the smell brought a smile to peoples faces and I enjoyed myself. In the future I think id do things the same way and not change a thing because I met my goals and people didn’t go hungry.
I had three members and only me and brad cooked or did anything really but I think three people in that kitchen would have been a little cramped.
I had an awesome experience on the hailey and Mathew it was everything I was hoping for and then some. I hope they decide to bring the boat back so I can sail it again in the spring.

However the only thing that I felt was bad about our meal was that everything we had needed to be refrigerated, which would have caused a problem in the long run if we had to stay on the boat longer than planned. Also I don’t really think we all did the theme part of the meal to well. We said it was a Denny’s theme, but I don’t know…I just think a lot more planning could have went into our meals to meet all of our goals. I felt that we all worked for the most part as a group and had an equal part in all the preparation and planning of our meal. I did get sick feeling for a little while and had to get out of the hot kitchen, so I guess I didn’t help cook the entire time. However it’s better than me getting sick on the breakfast.
Well I think you know how I felt about the trip. I was ready to leave before I even got on the boat. I expected the trip to go awful and for me to be sick, and that’s exactly what happened. So in a way I guess the trip was everything I expected it to be. The high points…well probably walking around Boston because I was on land. And being sick was the worst part of the trip. Well our group really didn’t get a chance to do nautical navigation on the boat so I really am not that good with it just yet. I think the both boats equally are just an awful time. And I feel that we all worked as a group fairly well.
