Hi Gang,
I have received word from the boat captains that the earliest we will be leaving would be this Saturday. The lead captain is flying in on Thursday evening and would like a day to review the boat. If everything on the boat meets his approval, we could be leaving as early as Saturday morning. If, however, there are things on the boat that need to be improved, we would need to wait until after those improvements are made. So… Let’s plan on leaving Saturday morning, and then we will be all set if it ends up being a couple of days after that.
This means that the rest of your week will be as scheduled: we will be having sailing class on Wednesday starting at 10:00 in Eastport, and then will have Nautical Navigation class Wednesday evening in Calais at 5:30. However, we will need most of the day on Friday to prepare for our trip, so plan on meeting at 9:00 in the classroom and be prepared to spend all of the morning and most of the afternoon shopping, prepping, and packing for the sailing trip. Please bring your menus and all materials associated with the menu assignment with you and completed on Friday morning – you will not have time during class to work on it. Backcountry Food Prep and Disease
As you have learned of various potential health hazards related to food preparation in the backcountry, hopefully you have become aware of the importance of hygene while working and preparing food in the field. As we finish our backcountry disease presentations and begin focusing on food preparation, I would like you to comment on the following:
1. Identify three strategies you will include in your planning for our sailing expedition to reduce the potential for transferrence of disease while on our trip.
2. What was (or what do you think will be, if you haven't yet presented) the most difficult part of presenting your lesson? How will you overcome this challenge the next time you present? (Oooh, yes, that's right - there will be a next time!)
3. As we begin preparing for our sailing expedition, think about a meal that you would describe as an excellent experience.
a. Describe this meal.
b. Identify what made this meal exceptional (i.e. the atmosphere, the company, the food, the presentation, the situation, etc.)
c. Explain how you could incorporate aspects of your exceptional dining experience into your meal preparation while on our sailing expedition.
4. What expectations do you have of this sailing expedition? Describe what you think it will be like during a typical day on board, and identify what aspects of the experience you are looking foward to, and what aspects you are concerned about.
Again, be sure to use spell and grammar check, and use complete sentences and paragraph structure. Also remember to STUDY for your backcountry disease quiz(zes) on Friday morning.

Well I am going to wash my hands before handling any food. Also like Taylor did on the other trip, I could squirt the sanitizer right in everyone’s hands to make sure that everyone else is being clean and sanitary.
I just am awful at presetting, I get really nervous. I don’t really know what else I could actually be better. I have always just sucked at it and I think I probably always will. And it doesn’t matter how much I practice, so don’t even think that, cause once I’m in front of everyone I forget everything I was going to say.
Well I haven’t had a chance to talk to people in my group yet about anything, so I haven’t the slightest on what were planning on doing. But if it was just me I am perfectly happy with Ramon noodles. There cheep, easy, filling, and easy to pack. However there is nothing really special about it I suppose.
To be honest I really don’t know what to expect. Like for the last trip I didn’t think it was going to be that exciting, but I really liked it. I excited about this trip, but who knows I might hate it. But I would imagine that we will work in shifts on navigating, and some people have to cook on their day, and I’m sure we will have some Scott time, doing some sort of activity (like the LNT on the last trip). And I thing I will most likely get seasick…yup that’s about it I guess.
the three things that may protect us by diseases is to use germ-X, wash your hands, and washing the food and where you eat. The most difficult thing for my presentation is standing in front of everyone, and speaking clearly, to overcome this is practice saying it in front of people before you present. My group is still thinking of what we are going to be preparing but we have wrote some things down, but we will make it easy to pack easy to make and hopefully it will fill people up. I hope it is not going to be a stressfull trip and hope we will have fun.
I think that we should make sure that we all wash our hands before touching or eating any food especially if you are the one cooking it. I also think that we should have hand sanitizer available and could even squirt it into peoples hands just to be sure.
I’m not too sure on how I did presenting. I knew what I was talking about but as soon as I get in front
of people I forget what I wanted to say. My mind always goes blank that is why I read from my piece of paper. Which I knew I was doing it and I shouldn’t have but did because of my nerves. I just think that the more practice I have the better and more comfortable I will be in presenting.
I think that a really good meal for our sailing trip would be lobsters! I know this couldn’t happen because we have a food budget but it would be nice. We are out on the ocean we should eat something from it. We could start off with a nice glass of wine or beer and then have a couple of lobsters! That would be great. Our theme could be the captains meal or something. It’s a good dream I know.
I’m looking forward to this trip because I like big boats unlike our little sail boats that I have a huge fear of for some reason. I have never gone on a trip on a boat before and think it would be a really great experience and something else to say that I have done. I have had the opportunity to go but never took it. I am a little worried about getting sea sick and just hope that we have nice weather because it wouldn’t be too great if we had really rough seas. I am bringing my camera on this trip!

same as with the kayaking trip we should use the hand sanitizer and the group that is cooking should wash thier hands aswell for added safty. be sure to keep the cooking space and tables that we will be eating from clean.
the presentation i wasnt that crazy about i dont get nerves about speaking infront of ppl i just always forgot what needs to be said. its pretty much the same way with tests i can remember everything till i really need to know it. eventually though it just sinks in.
i dont know wat others in my group r planning for the meals. it is hard to stay withing the food budget and try to pick foods that r good and filling at the same time so just simple quick meals that arnt the best but r filling and dont take much work to prepair.
this will be my 1st time on a boat this size , biggest was probably the 35 foot lobster boat i did some work on durring the past couple summers so this will be completly knew to me. i think the start of the trip might be a bit rough cuz we dont know all the boundrys and and how exactly it works sense we r used to the small sail boats and stepping up to this. after the 1st day or two though and once we get the hang of it can bet everyone will love it. just gotta hope the weather is nice to use

Everyone in food prep. will wash their hands before and after handling food.The food will be cooked to at least 165 degrees. All cookware dishes and food prep. surfaces will be cleaned wirh chlorine and water,food will be cooled down to at least 45 degrees. My topic was not presented smoothly because of nerviousness. Repetition should help.
Several years ago the local priest came to dinner. My wife cooked all day. The meal was a success. After that the priest would make sure he had a hearty appeitite when he came to our house. When he left for another parish he told the incoming priest, "when the Marbles invite you to dinner, "GO"! I have learned that good food can be a memorable experince.
I very much want to experience sailing on a large sail boat and learn to operate the sails. Navigation will be interesting but I have had some experince in the past.
1. I think that a few strategies that will help so we don’t get diseases while on the sailing trip will start back here at school. As soon as we get the food from the supermarket we will have to keep it cool or frozen or however it was stored at this place. Than when we get to school wash hands and start repacking things. Being sure to wash or sanitize hands in between playing with meats and fruits and veggies. Also to cook all the meats before hand and repack those so there won’t be any raw meat floating around on the trip with the potential of the blood dripping out of it and getting all over the uncooked foods and contaminating them. Also planning to have everyone use hand sanitizer before every meal and to wash after going to the bathroom.
2. I would probably have to say that the most difficult part of presenting would have to be that saying the knowledge that you know is hard to relate it to the slide that you are showing without first reading the slide to see which one it is and which information you have on it. I know in my presentation I had some things from each section scattered throughout the presentation and I didn’t know which I had on which slide so it was tricky trying to talk about something that wasn’t right there but would be on the next slide. Next time I present I will make sure that I have ALL my info on one page and even if it does go with another section to not put them two together.
3. A meal that I would describe as an excellent experience would probably have to be something like a home cooked meal with the same aromas filling the air. It would probably have to be like something like bacon and eggs and toast with more than enough to go around. The reason I would have to say that this would be a great meal would be because it smells really good while cooking and everyone can’t wait to dig in. it is also a really good tasting meal for being out at sea. The people around would make it good anyways with the breakfast stories and such that I can assume will be told on the boat. We plan to do this exact same meal idea on the trip by getting everyone siked up about eating and having all the smells in the air. They aren’t going to get upset when they see what we give them because it is going to taste exactly how it looks and smells. I think that if you have good food it has to actually look appetizing for someone to actually want to eat it or at least give it a try.
4. The probably biggest expectation I will like to have will be being able to plot courses and navigate using these to get to a destination. It is going to be awesome to go outside of Maine on a trip. The farthest I have been out of state is New Hampshire. I think that a typical day on board is going to be something like the sea kayak trip was. Doing a little bit of sailing and some classroom with some time to hang out and get to know everyone on board. I’m really looking forward to being way out at sea. It will be a new experience for me and I also can’t wait to go through the canal in mass. There is not really anything that I could say that I am concerned about I know that there will be captains on board so if anything does go wrong it’s not like they haven’t delt with it before the weather looks awesome and it will be a great time
I plan on washing my hands on a regular basis. Make sure all food is stored properly in a good place and at the right temp. make sure everyone else is washing there hands as well.
the hardest part was talking in a way that would seem I new the topic through and through instead of reading off a paper. next time i will reherse more and make sure i can do the best that i can.
my expectations of this trip are pretty hgih i think it will be a good expirience for me and everyone in the class. I think a typical day would be me sitting on a large boat sailing navigating and eating and thats about it.
